Bison Cooking Tips

Bison meat needs to be cooked differently than beef. You will find that you can interchange bison meat with all of your favorite beef recipes if you follow a few basic instructions. Bison meat is very lean. It has only about a quarter of the fat that beef has and will get dry and tough if overcooked. With its low fat content it will cook faster than you would imagine, even at the lower temperature.

Bison Steaks or Bison Patties -------------------------------------------

  • Gas Grill: Spray grill grate with Pam or oil. Place meat on the grill when the grate is warm to prevent sticking. Cook over medium heat. Turn often (every 1-2 minutes).
  • Pan Fry: Use Pam or oil in the fry pan to prevent the meat from sticking. Cook over medium heat. Turn often (every 1-2 minutes).
  • Oven Broil: Not highly recommended, but can be done. Lower your rack one level before broiling. If available on your oven, use a low broil setting. Turn often (every 1-2 minutes). Watch carefully.

Oven Roast ---------------------------------------------------------------------

Set oven to 275-300 degrees. Use a meat thermometer using the setting for beef. Roast to your desired doneness. Best if cut against the grain and into thin slices.

Meat Loaf -----------------------------------------------------------------------

Use your favorite meat loaf recipe and substitute bison meat for the beef. Set oven to 300 degrees and bake for approximately one hour.

Ground Bison ----------------------------------------------------------------

Ground bison may be used in any of your recipes that call for beef. To sauté or to brown the bison meat, remember to use low heat and stir the meat often. It will cook faster than you would expect. Do not overcook.

Cooked properly, bison meat is delicious! In addition, it has been accepted as a healthy, nutritious form of red meat. When you eat bison meat, you are eating pure wholesome meat that is high in protein and low in fat and cholesterol.
